Hourglass Winery
The Hour Glass winery consists of a sheltered outdoor space for fermentation tanks and a cave for aging wine barrels and hosting tasting sessions. A large right-angle cut was made into the site’s hillside. The retaining walls on either side house the entrances to the cave. The steel structure of the overhead canopy cantilevers over the processing area and anchors into the hillside with long tieback anchors.
